Sweet and Sour Seitan Recipe

Seitan is a vegetable protein made from wheat gluten, so this recipe is not suitable for people with coeliac disease or gluten intolerance. It is a very healthy food, rich in essential amino acids and minerals, and with high protein content: 100 grams of seitan provide 29 grams of protein. Its texture and flavour make it the perfect substitute for animal protein, which is why it is popularly known as vegetable meat or vegan meat. It contains no cholesterol, saturated fats or sugars and is very easily digested, which is why it is especially recommended for people with digestive and stomach problems. Sweet potato has a high nutritional value and is a satiating and comforting food that helps to maintain good intestinal health. It is a source of fibre and starchy carbohydrates, which provide energy, essential minerals, such as potassium, magnesium, or calcium, which contribute to the correct functioning of the nervous and muscular systems, and vitamins A and C, which have antioxidant properties. Chinese cabbage has high-water content and is rich in fibre, beta-carotene, amino acids, minerals, and vitamin C. It reduces intestinal inflammation, promotes the elimination of toxins, strengthens cardiovascular health, and helps control hypertension.

Onions are a source of fibre, vitamins A, B, C and E, flavonoids and minerals, such as potassium, phosphorus and magnesium, and their consumption provides multiple health benefits. It is a diuretic food that improves the body’s purifying processes, helps to maintain good gastrointestinal health, is a powerful antioxidant with anti-inflammatory properties and is a great ally in combatting fatigue and tiredness. In this recipe, we recommend using French onion because it adds a sweet touch to the dish.

Finally, sesame seeds are a source of healthy fatty acids, fibre, essential amino acids, B vitamins and minerals such as iron, zinc, and calcium. They help regulate bowel function and cholesterol levels, protect the cardiovascular system, strengthen bones, boost the immune system, and provide energy.

Ingredients

Seitan

250 g seitan

1 sprig thyme

1 clove garlic

80 g mirin

1 bay leaf

 

Sweet and sour orange sauce

100 ml orange juice

10 g tamari

30 g concentrated apple juice

2 g kuzu

1 tbsp orange zest

1 tbsp sesame seeds

 

Trinxat

250 g sweet potato

100 g Chinese cabbage

2 g preserved Moroccan lemons (lemon confit)

2 tbsp salt and pepper

25 g olive oil

1 bay leaf

1 clove of garlic

 

French onion petals

250 g French onion

1 sprig lemon thyme

1 tablespoon salt

1 tablespoon olive oil

Preparation

Seitan

Slice the seitan and marinate with the thyme, garlic, bay leaf and mirin for two hours.

Sweet and sour orange sauce

Dissolve the kuzu in a little water and mix with the orange and apple juices, tamari, orange zest and sesame seeds in a blender. Heat until the kuzu gels and gives texture to the sauce.

Trinxat

Peel and slice the sweet potato and boil it with the bay leaf and salt. Julienne the Chinese cabbage, chop the garlic, sauté both with a dash of oil and, when the cabbage begins to brown, remove from the heat. Mash the sweet potato to a puree, add the cabbage and finely chopped lemon, and season to taste.

Place the ingredients in a vacuum-sealed bag and steam in the oven at 100°C for 10 minutes.
