Hi all!

Occasionally we will propose in the blog a healthy recipe from our Shamadi restaurant so you may cook it from your own home. Today we start with the Quinoa Salad, a really simple, tasty and very nutritious dish. Have you tried quinoa?

Quinoa is the main ingredient in this healthy recipe

Quinoa is technically a grass seed, although normally it is considered a whole grain for its composition and the way of eating. However, compared with other grains is quite high in protein, iron and magnesium. It has been cultivated for over 5000 years in the Andes and is notable for containing the 8 essential amino acids for the human body. In addition, the Andean peoples also use it for therapeutic purposes as bleeding or dislocations.

To make a quinoa salad you will only need water, quinoa grain and dried fruits or vegetables you like most. To cook quinoa you have to take two parts water to one part quinoa and boil until the water is gone and the grain is al dente, closed. If you add too much water the cereal will open and will be overcooked. Once quinoa is ready, yo leave it to cool and you add the rest of the ingredients as desired.

Our chef Pablo Montoro makes a version with pumpkin seeds, sunflower seeds, raisins and sesame.

Ingredients: water, quinoa, salt, pumpkin seeds, sunflower seeds, raisins, sesame, dressing.

Time: 20 minutes approx.

For seasoning in healthy recipes we use Himalayan sea salt, virgin olive oil, umeboshi vinegar, lemon juice or even soy sauce. As we said, you can always make your own version by adding other healthy ingredients such as carrots, spinach or roasted almonds.
