Healthy paella recipe
Last week we presented an original version of a spanish classic recipe as gazpacho and it’s the turn of paella today. Try to prepare this healthy paella recipe in which vegetables are as importante as rice. Let’s start!
Ingredients:
- 2 cups of half-cooked brown rice
- 1 onion
- 1 carrot
- 1 small sweet potato
- 1 courgette
- 10 peas
- ½ small head of broccoli
Salmoreta Sauce Ingredients:
- 2 dried peppers (ñoras)
- 2 garlic cloves
- 1 tomato
- Parsley
- Olive oil
Vegetable stock Ingredients:
- 1 onion
- 1 carrot
- 1 leek
- 1 stick of celery
- 2 cloves of garlic
- 3 bay leaves
- 1 sheet of kombu
- 1 tbs sweet paprika
Preparation:
- Stock:
Boil all the ingredients together for 30 minutes. Keep for later.
- Salmorreta Sauce:
Crush the garlic cloves, then gently fry in 2 tbs of olive oil.
Cut the dried peppers into pieces, remove the seeds and fry gently with the garlic.
Add the grated tomato and cook together for 5 minutes.
Add 30 grs of parsley and blend the sauce.
Add the sauce to the vegetable stock.
- Prepare the paella:
Cut all the vegetables in little cubes and fry them in a large pan with 2 tbs of olive oil in this order: onion, carrot, sweet potato. Add the rice and cover with the broth.
Cook for 15 minutes over low heat. Add the courgette, broccoli and sugar snap peas after 5-7 minutes of cooking.
Once ready, leave it for some minutes before serving.
