Vegetable, Arugula and Avocado Surprise*

Ingredients:

  • 2 cups arugula
  • 1 cup butternut squash cut into bite size pieces
  • 1 cup cauliflower cut into bite size florets
  • 1 cup mushrooms cleaned and stems removed
  • 1 tablespoon olive oil
  • Pinch sea salt
  • Handful of pomegranate seeds
  • ½ avocado sliced
  • Toasted black sesame seeds
  • Black pepper (optional)
  • I tablespoon of balsamic vinegar mixed with a squeeze of orange juice

Preparation:

  • Arrange the arugula in a bowl
  • Place the squash, into a pan.
  • Add enough wáter to cover the bottom of the pan.
  • Season with a sprinkle of sea salt .
  • Cover and bring to a boíl. Simmer on a low flame for about 5 minutes.
  • Add the cauliflower, mushrooms, and a tablespoon of olive oil.
  • Continue to cook for another 5 minutes.
  • Remove and allow to cool for a few minutes.
  • Place on top of the arugula.
  • Add the avocado slices, pomegranate, and sesame seeds.
  • Drizzle with the balsamic orange mixture and serve.
