Today we share one of our favorite summer recipes: an ice cream recipe that is lactose free, egg free and sugar free. The perfect ice cream recipe for diabetics, lactose intolerant, intolerant to eggs, celiacs… or simply for people who want to enjoy summer without sacrificing their health. It’s an easy, cheap and simple recipe for homemade ice cream. The ice cream can be eaten alone or accompanying desserts as rich and healthy as the one in the photo.

For this lactose free ice cream recipe, we should substitute cow’s milk for oat milk or soy milk, or even mix both of them. It can also be made ​​from oatmeal yogurt or soy yogurt.

Ingredients for sugar free ice cream recipe:

– Oat milk 500ml

– Soymilk 50ml

– Organic cream 200ml

– 2 grams of agar-agar (a jelly made ​​from seaweed that will help us get the right texture besides it gives us much calcium and vitamins)

– Agave, maple syrup or rice syrup as you prefer (only if you like sweet and feel the need as a replacement for sugar, but it is best to get used to make ice cream without sugar or syrups)

– To add the flavor you desire: a teaspoon of pure cocoa powder to make chocolate ice cream, a teaspoon of cinnamon for cinnamon ice cream, grated lime or lemon for lemon ice cream, grated coconut for coconut ice cream, a tablespoon of ginger juice for ginger ice cream, or crushed fruit to make homemade ice cream like strawberry ice cream, raspberry ice cream, banana ice cream, etc. Just the way you like it!

Preparation of lactose-free ice cream recipe: put all ingredients together in a saucepan and bring to boil until the agar-agar is dissolved, stirring constantly. If it is a fruit ice cream, it’s best to crush the chosen fruit previously. When the mixture is cooked, let it cool and freeze during at least 12 hours. To get a better texture it is best to put it through the Thermomix or an ice cream machine before serving, but with a regular blender it would work too.
